Christmas Ready

Christmas morning was right around the corner and after we had our Christmas, we were planning on going to my aunt's house, so I decided to take a few treats to snack on in between meals. Well my whole family has caught the gluten bug so I wanted to make something gluten free but keep it traditional.  I decided to make gluten free gingerbread cookies. I also wanted to make something for everyone else and made some cake balls,which I usually always result to making because I can actually make them without messing up. To start with I found this recipe from this blog and it was super easy to make. Gluten free gingerbread cookies.
Ingredients:    1 box of cake mix
                          1 container of icing
                               1 pack of almond bark
           Sprinkles 

Cake balls are easy to make. All I did was get 1 box of cake mix and 1 container of icing. I chose the funfetti Christmas mix and corresponding icing. So the inside of the cake balls will turn out to be green. And I used white almond bark and Christmas sprinkles. 
1. Bake the cake and then let it cool.
2. In large bowl crumble up cake mix and half container of icing.
3. Roll out balls and place n wax paper
4. Chill for about 2 hours
5. Melt almond bark
6. Roll balls into melted bark and place back onto wax paper ( I use a small fork or toothpick)
7. Dash sprinkles on while still melted
8. Chill another hour 
Yummy!

Sunday Day of Rest

Well the saying Sunday is a day of rest is exactly what I did today was rest. I got a few things done but.. I did stay in my pajamas all day along with my boys. Which was much needed after a hectic week. Today I took time to sit down watch tv, relax and reflect on being thankful. We do not have a lot of extraordinary things, but what we do have I need to appreciate more often. Today I noticed the small things that make my boys happy and thought really this is all I have to do and they are quite content and happy. They are at a good age when money isn't a problem to them they don't really full understand it. They think I can get money whenever I want just go to the bank and get some right.. there's an endless supply. They don't actually understand that the money you get is yours, they just thinks its there for you to get. I really love the unawareness that they have. Even when we have financial difficulties they have no clue and that just makes its a littler easy to bare. 

Heres a few things that our day consisted of.. 

Tattoos. They love putting on tattoos.
Oranges. They love the fact that can can peel their own orange and it occupies them for about 30 minutes. They feel BIG when they get it accomplished. 
 Wow the flash got the best of this orange 
 Oh. and I repotted my aloe plant. I live by aloe remedy, I swear it cures everything.

Also today I washed my sheets; Brink and Britton love watching tv in our room and laying on the Big bed and snuggling up and it is also the darkest room in the house so it is fun to watch movies in. But since it didn't have any bedding I made a little camp for them and they also got really excited about this. I usually can't keep them in there too long because they think their missing out on something but they watched two movies in a row without coming out. I never knew a sleeping bag could make such a difference. But like I said. It's the little things that gets them very excited! 

I also mentioned in a past post that I was making more fleece blankets for the cousins as part of their Christmas. Well I am very excited to say that I have them completed. I finished the last one today during a Netflix marathon I had going of 'Parenthood'.  BTW, I love that show and highly recommend it. 
                                               
I think they will really like their blankets. All in all it has been a peaceful day and we didn't have anywhere to be, nothing we had to do that couldn't wait and I really enjoy these days with my boys. Thanks as always,

Small Version of Tape Painting

I have found many paintings from pinterest that people have done using tape, and my boys were getting very unruly so I decided to give them something to occupy their time and give me a little peace as well. They love being focused on something and get really excited when they create anything. I really love for them to do anything art related to let them use their creativity or just holding that paintbrush they feel very in control and feel appreciated. Every time I praise something they make, I can see that they really feel like they accomplished something. I think that everyone should feel that way everyday whether its something big or small. 

This is their lovely creation. I taped the canvases and let them choose what colors and how they wanted to paint it. I think it is also a great stress relief for them when they start getting tired and cranky and start fighting each other. 


 Here is their finished product. I think it going to look great framed on their wall in their room.

Holiday Chip Dip

My grandma gave me this recipe a few years back and I have loved it ever since. I make it throughout the year but I really enjoy it through the holidays because of the cold weather, everyone seems to love it and it makes a bunch so you can share. 

This recipe is really easy to make and only calls for 3 ingredients, Canned diced tomatoes with green chilies, hamburger meat, and Velveeta block cheese.
                                            
Depending on how much you want to make which determine how much you want to use. If you are just wanting to make some at home then you can use half a block of cheese, 1 can of tomatoes, and 1 pound of hamburger meat. If you want to make some to share or take to a party then you use the whole block of cheese, 2 cans of tomatoes and 2 pounds of meat. It really just depends on how you like it and you can play around with how much of each you want to use. 

I usually use the whole block because I like to have left overs and I use 2 pounds of meat because we like it meaty but you can double it and only use 1 pound of meat and it will still be good and a little more cheesy. It's all up to you!

So I start by browning the meat


Then drain the meat and add the cheese. I start out with half of the block, but later add the other half. I then also add the tomatoes.
 It will gradually melt while you occasionally stir it.
In the end it will all be melted and become a delicious chip dip. The recipe my grandma gave me calls for the yellow cheese, but since it is Christmas I decided to try (queso) the white cheese so that it is white and red and green. You can even add some more green peppers to bring out a little more green. I feel very festive!

What to cook when you have nothing to cook..

Today I wanted to share our dinner because I had to get quite creative for the reason that I have not been to the grocery store. I hate going to the grocery store. I really need to change that about me but I just dread it every time. Therefore we get pretty low on everything before I actually go and then I have to buy bulk groceries that is a buggy full and that is pretty annoying too. It takes forever in line and then forever to unload once I'm home and then forever to put up. I am aware that it would be easier if I go every week or at least every two weeks but no matter how hard I try it never happens. I also refuse to go when I have the boys because it is an absolute NIGHTMARE. They think the helicopter buggy is a small wrestling ring or they end up hanging out of the buggy by their feet. It is never a pleasant experience no matter the bribing. 
I also really hate when other people who know nothing about me tell me how to parent or let me know that they are about to fall out of the buggy. THANK YOU I know. 

Anyways.. to the point of the post. This is one of those times where it is time to go to the grocery store but ahh I just hate it. 

So I start plundering around the kitchen and pantry to see what I can come up with. 
I find progressive southwestern vegetable soup and decide to start with that.
The problem with just eating this soup is that it is about 1/4 full of vegetables and the rest is liquid so it would not be very filling. It also didn't have any meat and we like lots of protein, so I tried to figure out what to do about meat. I then found one pound of hamburger meat which wasn't enough to make anything else with it because we always use 2 pounds whenever recipe calls for 1. So I decided to add it in the soup. 

I also have boil in a bag rice which I add to everything. I love rice. I could and usually do, eat it everyday. Brink also loves rice just as much as I do and it is one thing he is not allergic to so that doesn't hurt either. So I usually have a lot of boil in a bag rice on hand. I think I may be part cajun-asian. 
So the directions are quite simple; I have the soup, add the rice, and then add the meat. I also add a little more water. It went from filling up half of the pot to filling up the pot to the top.It is a simple but filling meal and I even added some boiled eggs on the side. A little odd dinner but full of protein. I like to call it Goolash-Stew. Easy as

It turned out pretty good for not having much too cook. Made my husband laugh a little too so it was all worth it. Let me know what crazy dinner you come up with when your running low on food. I also hear about people money fasting for a month and have to come up with the same scenario, so it is pretty fun trying to find something from nothing and it also makes you appreciate what you have and not be so wasteful. I know sometimes we have something sitting in the freezer for ever! Its good to make time to get that stuff out and start new. It would also save you a little money.
